Adventures in Smoking

We have literally used our smoker one time. It was back in Cincinnati and the voltage required to keep the thing on blew a fuse in my 125-year old house. It's sat idle for several years, but for some reason Peter was inspired to do Texas barbecue brisket this weekend. Here's the start of the adventure.

Is this the recipe I saw in "Cooks Illustrated" a month or so ago?

Can't wait to see if it worked. I was going to attempt using our charcoal grill with one of those secondary charcoal things on standby to refire the main grill...

It's actually one we dug up on Epicurious and it was GREAT! We're still finishing off all the meat. Look for a follow-up review later this week...

It might be really tiring to try to do this on the grill. This thing took FOREVER.
